Method
Prepare Bed & Oysters

Chill bed
Spread crushed ice or rock salt in an even layer across a large serving platter large enough to hold six oysters. This stabilizes the oysters and keeps them cold.

Rinse the oysters under cold running water to remove dirt and grit from the shells. Use a stiff brush if needed. Keep them cold on ice until you are ready to shuck (do not soak).

Set up a safe shucking station: place a folded kitchen towel on the counter, hold the oyster with towel (or wear a glove) cupped so the hinge faces you.
Shucking

Insert the tip of a cold oyster knife into the hinge (the pointed end). Twist the knife gently until you feel the hinge pop. Run the knife along the top shell seam to cut the muscle attaching the oyster to the top shell, then lift and remove the top shell. Discard the top shell.

Slide the knife under the oyster meat to sever the bottom muscle so the oyster sits freely in the deep half shell. Keep the oyster level so liquor (briny liquid) remains in the shell. Repeat for all six oysters and arrange them on the chilled bed.
Make Mignonette

Combine red wine vinegar, finely minced shallot, cracked black pepper, and salt in a small bowl. Whisk or stir until the salt dissolves. Taste and adjust: if too sharp, add a few drops of water or a pinch of sugar. Fold in thinly sliced chives. Transfer to a small serving ramekin.
Make Cocktail Sauce

In another small bowl, whisk together ketchup, prepared horseradish, Worcestershire sauce, fresh lemon juice, and hot sauce (if using). Taste and adjust horseradish or lemon to balance heat and acidity. Transfer to a small serving ramekin.
