Fried Oysters

Prepare oysters
Place the shucked oysters in a colander over a bowl and let them drain for 10–15 minutes, pressing gently once or twice to remove excess liquor. Pat oysters lightly with paper towels to remove remaining surface moisture.

Marinate
In a shallow bowl or dish, whisk together the buttermilk and hot sauce. Add the drained oysters and stir gently to coat. Cover and refrigerate for 20–30 minutes (this tenderizes and flavors the oysters).

Make dredge
In a large shallow bowl or rimmed baking sheet, combine the all-purpose flour, toasted cornmeal, salt, black pepper, cayenne, garlic powder, and paprika. Whisk thoroughly to ensure an even seasoning distribution.

Heat oil
Pour oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1½ inches (about 3–4 cups depending on pan). Heat over medium-high until the oil registers 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping a small pinch of the dredge into the oil — it should sizzle and brown in about 30–45 seconds.

Dredge oysters
One by one, remove oysters from the buttermilk (let excess drip off), then dredge them in the flour/cornmeal mixture, pressing lightly so the coating adheres. Shake off excess. Place the dredged oysters on a wire rack set over a sheet tray while you finish the rest.

Fry
Fry oysters in batches—do not crowd the pan. Carefully lower 6–8 oysters into the hot oil and fry 2 to 3 minutes, turning once with a slotted spoon or spider, until golden brown and crisp. Internal texture should be just opaque and slightly plump. Adjust heat as needed to maintain 325–350°F (160–175°C) while frying.

Drain
Using a slotted spoon or spider, transfer fried oysters to a paper towel–lined tray or wire rack to drain briefly. Sprinkle with a light pinch of salt while hot, if desired. Repeat with remaining oysters.

Notes
For best texture, serve oysters hot and crisp. Leftovers can be reheated in a 375°F (190°C) oven on a wire rack for 6–8 minutes but will lose some crispness. Use fresh, high-quality Gulf Coast oysters and avoid overcooking — they should be just cooked through.
