    Rinse shucked oysters gently in a colander to remove excess liquor; allow to drain for 5 minutes. Transfer oysters to a bowl and stir in buttermilk, hot sauce, kosher salt, and black pepper. Cover and refrigerate for 20–30 minutes to slightly plump and flavor the oysters.

Remoulade Sauce

    Make the remoulade

    While oysters marinate, whisk together mayonnaise, mustard, horseradish, chopped capers, hot sauce, paprika, Worcestershire, lemon juice, Cajun seasoning, salt, and black pepper in a small bowl. Taste and adjust heat or acidity. Cover and refrigerate until assembly.

Breading

    In a shallow baking dish or wide bowl, whisk together flour, cornmeal, corn flour (if using), baking powder, paprika, garlic powder, onion powder, cayenne, kosher salt, and black pepper until evenly combined. Set up a dredging station: the bowl of breading and a tray for dredged oysters. Remove oysters from the buttermilk mixture with a slotted spoon, letting excess drip back into the bowl, and place them briefly on a paper towel-lined tray. One at a time, toss oysters in the breading to coat completely, pressing lightly so the breading adheres. Shake off excess and arrange on a separate clean tray. For extra-crisp double coating, dip oysterc in the buttermilk again and re-coat in the dry mix.

Frying & Assembly

    Pour oil into a heavy-bottomed pot or deep fryer to a depth of 2–3 inches and heat to 350°F (175°C). Use a candy/deep-fry thermometer to monitor temperature. Fry oysters in small batches (6–8 pieces depending on pot size) to avoid crowding. Gently lower breaded oysters into hot oil, stirring once to prevent sticking. Fry 2.5–3.5 minutes, turning as needed, until golden brown and crisp. Internal oyster will be hot and edges crisp. Use a slotted spoon to transfer fried oysters to a wire rack set over a baking sheet; season immediately with a light sprinkle of salt. Maintain oil temperature between batches, adjusting heat as needed.

    While oysters fry, split the rolls and optionally brush cut sides with melted butter. Toast cut sides in a skillet over medium heat until lightly browned, or under a broiler for 1–2 minutes. Spread about 1 tablespoon of remoulade on both cut sides of each roll. Layer shredded lettuce on the bottom half of each roll, add sliced tomatoes and pickles as desired.

    Pile 6 fried oysters per sandwich onto prepared rolls (adjust oysters per roll if using different roll size). Spoon additional remoulade over the oysters to taste. Close sandwiches, press gently, and serve immediately with lemon wedges on the side.

    If plating family-style, keep fried oysters on a warm rack in a low oven (200°F/95°C) for up to 20 minutes while you finish remaining sandwiches. Serve with extra remoulade and hot sauce on the side.
