Fried Crawfish

    Marinate crawfish

    Place peeled crawfish tails in a medium bowl. Add buttermilk and 1 tablespoon hot sauce, stir to coat. Cover and refrigerate 20–30 minutes (this tenderizes and seasons the tails).

    Prepare dredge

    While crawfish marinates, combine flour, cornmeal, paprika, garlic powder, onion powder, cayenne, 1 teaspoon salt and 1/2 teaspoon black pepper in a shallow bowl or rimmed plate. Mix thoroughly so spices are evenly distributed.

    Heat oil

    Pour vegetable oil into a heavy skillet or Dutch oven to a depth of about 1" (approximately 1½–2 cups depending on pan). Heat over medium-high until oil registers 350°F (175°C) or a small cube of bread browns in about 45–60 seconds. Maintain temperature around 350°F while frying.

    Dredge and fry

    Working in small batches to avoid lowering oil temperature, remove crawfish from buttermilk (let excess drip off) and dredge evenly in the flour-cornmeal mixture, pressing gently to coat. Shake off excess and carefully lower into hot oil. Fry 2–3 minutes until golden brown and crisp. Use a slotted spoon to transfer to a wire rack or paper towel-lined sheet to drain. Repeat with remaining crawfish.

    Season after frying

    While still hot, lightly season fried crawfish with a pinch of salt. Keep warm in a single layer in a low oven (200°F / 95°C) if making ahead by a few minutes.

Dressing

    Whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, optional hot sauce, 1/4 teaspoon salt and 1/4 teaspoon black pepper in a small bowl until smooth and emulsified. Taste and adjust seasoning or acidity with additional lemon or salt if desired. Refrigerate until ready to use.

Salad Assembly

    In a large bowl, combine artisan lettuce, halved cherry tomatoes, sliced cucumber, thinly sliced red onion and chopped parsley. Toss gently to combine.

    Add about half of the dressing to the salad and toss lightly to coat the greens evenly. Start with less dressing and add more to taste so leaves stay crisp.

    Divide dressed salad among 4 plates (or serve family-style on a platter). Place a generous mound (about 4 oz) of warm fried crawfish tails on each portion.

    Sprinkle each plate with freshly grated Parmesan and an extra 1/2 tablespoon Parmesan per serving. Garnish with lemon wedges on the side for squeezing over the crawfish.

    Serve immediately so the fried crawfish remain crisp. Offer remaining dressing on the side.
