Prepare and Mix
Chill glass
Place a champagne flute or coupe in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to chill it.
Build and shake
In a cocktail shaker, add 2 oz orange-infused gin, 0.5 oz fresh lime juice, 0.25 oz simple syrup, 0.25 oz maraschino liqueur and a handful of ice (about 1 cup). Secure the lid and shake vigorously for 10–12 seconds until well-chilled.
Strain
Discard the ice or water from the chilled flute/coupe. Double-strain the shaken mixture into the chilled glass using a Hawthorne and fine mesh strainer to remove small ice chips and any pulp.
Top with bubbles
Carefully top the strained cocktail with 3 oz chilled champagne or dry sparkling wine. Pour slowly down the side of the glass to preserve effervescence and avoid foaming over.
Garnish and Serve
Express the orange twist over the surface of the drink by holding it skin-side down and giving it a firm squeeze to release the oils, then rub the rim of the glass with the twist and drop it into the cocktail (or rest on the rim). If desired, add one maraschino cherry on a pick for a touch of color.
Serve immediately while the drink is cold and bubbly. Recommend pairing with light hors d'oeuvres.
