    Make a dark roux: In a large heavy-bottomed Dutch oven or stockpot set over medium-low heat, combine 3/4 cup vegetable oil and 3/4 cup flour. Stir constantly with a wooden spoon or heatproof spatula. The roux will go from pale to peanut-butter color to chocolate-brown; this takes about 20–30 minutes. Reduce heat as needed to prevent burning. When it reaches a dark brown (but not burnt) color, remove from direct heat briefly.

    Add the holy trinity: Immediately stir in the diced onion, green pepper and celery. Return to medium heat and cook, stirring often, until vegetables are softened, about 6–8 minutes. Stir in minced garlic and cook 1 minute more.

    Deglaze and build broth: Whisk in 2 tablespoons tomato paste until blended. Slowly add 8 cups chicken stock, about 1 cup at a time, whisking to combine and smooth the roux into the liquid. Add bay leaves, thyme, oregano, 2 tsp salt, 1 tsp black pepper and 1.5 tsp Cajun seasoning. Bring mixture to a gentle simmer.

    Simmer: Reduce heat to low and simmer uncovered for 30–45 minutes, stirring occasionally, until the gumbo flavors meld and broth thickens slightly. Skim any excess fat or foam. Taste and adjust seasoning, adding more salt or Cajun seasoning if desired.

    Finish with file (optional): If using, stir 1 teaspoon file powder into the pot off heat just before serving to add aroma and thickness.

Protein Preparation — Chicken & Sausage Option

    Brown the sausage and chicken: In a separate skillet over medium-high heat, add 1 tablespoon oil if needed and brown 12 oz sliced andouille sausage until edges are crisp, about 4–5 minutes. Transfer sausage to a plate. Season 1 lb chicken thighs with 1/2 teaspoon salt and 1/4 teaspoon pepper, then brown in the same skillet 3–4 minutes per side until golden (chicken will finish cooking in the gumbo). Transfer to the gumbo pot.

    Simmer with proteins: Add browned sausage to the gumbo and simmer for 20–25 minutes to allow the chicken to finish cooking and flavors to blend. Check chicken for doneness (internal temp 165°F / 74°C) and shred or leave in pieces, as desired.

Protein Preparation — Shrimp & Crab Option

    If choosing seafood, skip browning: Do not overcook shrimp or crab. Bring gumbo to a gentle simmer and add 12 oz peeled/deveined shrimp and 8 oz lump crab meat during the last 5–7 minutes of cooking. Stir gently until shrimp turn opaque and crab is heated through. Do not simmer longer or seafood will get tough.

Rice & Garnish

    Cook rice: Rinse 2 cups long-grain rice under cold water until water runs clear. In a medium saucepan bring 4 cups water to a boil. Add rinsed rice, 1 tablespoon butter and a pinch of salt. Return to a gentle boil, reduce heat to low, cover and simmer for 15–18 minutes, until water is absorbed. Remove from heat and let rest covered 5 minutes, then fluff with a fork.

    Prepare garnish: While gumbo simmers, slice green onions and chop parsley. Keep lemon wedges ready for serving.

To Serve

    Assemble bowls: Place 1/3 to 1/2 cup cooked rice into each serving bowl (adjust to taste). Ladle hot gumbo over the rice, ensuring each bowl gets a mix of protein and broth.

    Garnish and finish: Sprinkle sliced green onions and chopped parsley over each bowl. Offer lemon wedges at the table. Serve each bowl with a piece of French bread and a cold drink.

    Notes and timing: This recipe yields about 6 generous bowls. If preparing for the Family Wednesday special where guests choose either Shrimp & Crab or Chicken & Sausage, prepare both protein sections separately and add each chosen protein to individual bowls or smaller pots so seafood is added only at the end while chicken/sausage simmers longer.
