    Prepare chicken

    If chicken breast is thicker than 1/2 inch, butterfly or pound to an even ~1/2-inch thickness so a 6 oz portion cooks evenly. Pat chicken dry with paper towel.

    Season both sides of the 6 oz chicken breast with 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1/4 tsp garlic powder. Rub 1 tablespoon olive oil over the chicken to help seasonings adhere and prevent sticking.

    Preheat a grill pan or outdoor grill to medium-high (about 400°F / 200°C). If using a skillet, heat over medium-high until hot.

    Grill the chicken breast 4–5 minutes per side, flipping once, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C) and the exterior registers good char marks. (Thinner cutlets may take 3–4 minutes per side.) Remove chicken to a cutting board and tent loosely with foil; let rest 3–5 minutes to redistribute juices.

    Assemble sandwich

    While chicken rests, split and lightly toast the sandwich roll or bun on the grill or in a toaster for 1–2 minutes until slightly golden.

    Spread 1 tablespoon mayonnaise on the bottom half of the roll and 1/2 teaspoon yellow mustard on the top half (or to taste).

    Place the rested grilled chicken breast on the bottom half of the roll. Immediately top with 1 slice provolone cheese so it begins to soften from the chicken's residual heat. If you prefer fully melted cheese, return assembled open sandwich to the grill or under a broiler for 30–60 seconds — watch closely.

    Layer 1/2 cup shredded or torn iceberg lettuce over the cheese, then add 2 slices of tomato. Close sandwich with the top half of the roll.

    If desired, serve with a lemon wedge to squeeze over the tomato for extra brightness.

    Place the assembled sandwich into a to-go clamshell or sandwich box, ensuring it sits flat to avoid spillage.
