Buffalo Crawfish Salad Recipe

    Prepare crawfish

    If frozen, thaw crawfish tails in the refrigerator overnight or under cold running water. Pat dry thoroughly with paper towels to remove excess moisture — this helps the coating adhere and ensures a better sear/grill.

    Make dredge

    In a shallow bowl or plate, whisk together the all-purpose flour, cornstarch, smoked paprika, garlic powder, onion powder, kosher salt, and black pepper until evenly combined.

    Buttermilk soak

    Place the crawfish tails in a medium bowl and pour the buttermilk over them. Toss gently to coat. Let sit 5 minutes to help the coating stick and to add a little tang.

    Coat crawfish

    Working in batches, remove crawfish from buttermilk, letting excess drip off, then dredge in the flour mixture until evenly coated. Shake off excess and set coated tails on a wire rack while you preheat the grill or skillet.

    Preheat grill or skillet

    Preheat a gas or charcoal grill to medium-high (about 400°F / 200°C). If using a heavy skillet or cast-iron pan, heat over medium-high on the stovetop and add 2 tablespoons neutral oil to coat the surface.

    Grill or sear crawfish

    Grill: Brush the grates with oil. Place coated crawfish on the grill and cook 2–3 minutes per side until golden and just cooked through (tails will be firm and opaque). Skillet: Place crawfish in the hot oiled pan in a single layer, cook 2–3 minutes per side until golden and cooked through. Avoid overcooking — crawfish tails cook quickly.

Buffalo Sauce

    Make sauce

    In a small saucepan over low heat, melt the unsalted butter. Add the hot sauce, honey, apple cider vinegar, Worcestershire sauce, and salt. Whisk until smooth and warmed through, about 1–2 minutes. Taste and adjust salt or honey for heat balance. Keep warm off the heat or over the lowest flame.

    Toss crawfish in sauce

    Place the cooked crawfish tails in a large bowl. Pour the warm buffalo sauce over them and toss gently until evenly coated. Set aside for 1–2 minutes so sauce adheres.

Salad Assembly

    Roast or char the corn (if using fresh)

    If using fresh corn, char on the grill while preheating or roast in a 425°F (220°C) oven on a baking sheet for 10–12 minutes, turning once, until lightly browned. If using thawed frozen corn, heat in a skillet 4–5 minutes until warmed and slightly browned. Allow to cool slightly.

    Prepare greens and vegetables

    In a large salad bowl, combine the chopped romaine, warmed/roasted corn, halved tomatoes, sliced scallions, and chopped cilantro or parsley. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper; toss gently to combine.

    Dress the salad

    Drizzle about half of the 1/2 cup dressing over the salad (reserve the rest for guests or additional dressing on the side). If the dressing is too thick, thin with up to 1 teaspoon olive oil. Toss lightly so greens are evenly coated but not drenched.

    Top with crawfish

    Arrange the buffalo-coated crawfish tails on top of the dressed salad. Sprinkle bleu cheese crumbles over the top if using. Garnish with lemon wedges on the side for squeezing.

    Serve

    Serve immediately while crawfish are warm for the best contrast with the chilled greens. Offer additional dressing (bleu cheese or ranch) at the table.
