Prep chicken and marinade
Pat the chicken pieces dry with paper towels. In a medium bowl whisk together buttermilk, egg, and 1/2 teaspoon salt. Add the chicken pieces, toss to coat, cover and refrigerate for 30 minutes (up to 2 hours) to tenderize and help the breading adhere.

Prepare dry mix
While the chicken marinates, combine flour, cornstarch, baking powder, remaining 1 tsp salt, black pepper, garlic powder, onion powder, and paprika in a shallow bowl or wide plate. Whisk to evenly distribute seasonings.

Heat oil
Pour neutral oil into a heavy large skillet or Dutch oven to reach about 1 to 1 1/2 inches deep. Heat over medium-high until oil temperature reaches 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test with a small pinch of flour — it should sizzle steadily but not smoke.

Dredge and fry
Remove chicken from buttermilk, letting excess drip off. Working in batches to avoid crowding, dredge pieces in the dry mix, pressing lightly so coating adheres. Shake off excess and carefully lower into hot oil. Fry 3–4 minutes per batch, turning once, until coating is golden brown and internal temperature reaches 165°F (74°C). Use a slotted spoon to transfer fried bites to a wire rack set over a baking sheet to drain and stay crisp. Keep warm in a 200°F (95°C) oven while frying remaining batches.

Make the sauce
In a small saucepan over low heat, melt butter gently. Add hot sauce, apple cider vinegar, honey (if using), Worcestershire, salt and pepper. Whisk until blended and warmed through, about 2 minutes. Remove from heat. Taste and adjust — add more hot sauce for heat or a touch more honey for sweetness.

Toss chicken in sauce
Place the fried chicken bites in a large wide bowl. Pour the warm buffalo sauce over the bites and toss gently but quickly to coat evenly. If you prefer a lighter coating, reserve some sauce and drizzle on plates when serving.

Assemble ranch
In a small bowl combine prepared ranch dressing, sour cream (if using), chopped chives, parsley and black pepper. Stir until smooth. Taste and adjust seasoning; refrigerate until ready to serve.
