Cook Quinoa

Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

While the quinoa is cooking, wash and chop 1 cup of cherry tomatoes in half, dice 1 medium cucumber, and slice 1 medium avocado. Set aside.

Wash and tear 2 cups of kale into bite-sized pieces. Remove the tough stems and set aside.

Crumble 1 cup of feta cheese into small pieces and set aside.

Mix Dressing

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, and 1 teaspoon of honey. Season with salt and black pepper to taste.

In a large bowl, fluff the cooked quinoa with a fork. Add the chopped cherry tomatoes, cucumber, avocado, crumbled feta, and torn kale. Drizzle the dressing over the top and toss gently to combine.
