In a shallow bowl, whisk together the buttermilk, egg, Cajun seasoning, salt, and black pepper. In another shallow dish, mix the cornmeal and flour.

Coat the Fillets

Dip each catfish fillet into the buttermilk mixture, then dredge in the cornmeal and flour mixture, ensuring an even coating.

Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until hot, but not smoking.
