Capicola Preparation Steps
Prepare the Meat
Trim excess fat from the pork shoulder and cut it into manageable pieces.
Cure the Meat
Rub the cure mixture all over the pork pieces, making sure to cover them evenly. Place in a sealed container and refrigerate for 5-7 days.
Soak the Casing
Soak the pork casing in water for at least 30 minutes before use.
Stuff the Casing
After curing, rinse the pork pieces and grind them. Mix in the white wine and stuff the mixture into the soaked casing.
Tie and Hang
Tie off the ends of the casing and hang the capicola in a cool, dry place to dry and cure for about 3-4 weeks.
Slice and Serve
Once cured, slice the capicola thinly and serve as desired.
