Preheat and prepare

Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or foil for easier cleanup. If your cremini mushrooms are larger than bite-size, trim stems and cut mushrooms into halves or quarters to create roughly 1–1.5-inch pieces so they roast evenly.

Dry mushrooms

Place the cut mushrooms on a clean kitchen towel or paper towels and pat them lightly to remove excess surface moisture. Do not soak or rinse mushrooms — they will steam instead of roast if too wet.

Toss with oil and seasonings

In a large bowl, combine the mushrooms with olive oil, melted butter (or soften butter and add), minced garlic, thyme, soy sauce, apple cider vinegar (or lemon juice), kosher salt, and black pepper. Toss until mushrooms are evenly coated.

Arrange and roast

Spread the mushrooms in a single layer on the prepared baking sheet, gill side down where possible and with space between pieces. Roast on the center rack for 18–22 minutes, stirring or shaking the pan once halfway through (at about 10–12 minutes), until mushrooms are deep golden brown at the edges and reduced in size.

Finish in pan and adjust seasoning

If you prefer a slightly glossier, concentrated topping, transfer the roasted mushrooms to a medium skillet set over medium-high heat. Add the optional red pepper flakes if using and cook, stirring, 1–2 minutes to evaporate any excess liquid and concentrate flavor. Taste and adjust seasoning with an additional pinch of salt, a squeeze more lemon juice or a splash more soy sauce if needed.

Garnish and serve

Remove from heat and stir in the chopped fresh parsley. Let cool 2–3 minutes, then serve warm as a topping for steaks, burgers, crostini, pizzas, grain bowls, or mashed potatoes. Store leftovers in an airtight container in the refrigerator for up to 4 days.
