Roasted Cauliflower
Prepare oven and cauliflower
Preheat the oven to 220°C (425°F). Trim the cauliflower: remove outer leaves and core, then cut the head into small florets about 1 to 1.5 inches each so they roast quickly and evenly.
Make seasoning mix
In a large bowl, crush or finely mince the garlic cloves and combine with the extra-virgin olive oil, smoked paprika, ground cumin, kosher salt, and black pepper. Stir to make a loose paste.
Toss florets
Add the cauliflower florets to the bowl and toss thoroughly so each floret is evenly coated with the oil-spice mixture.
Roast
Spread the coated florets in a single layer on a rimmed baking sheet lined with parchment or a silicone mat. Roast in the preheated oven for 20–25 minutes, turning once halfway through, until the edges are golden brown and florets are tender when pierced with a fork.
Finish with lemon
Remove the cauliflower from the oven and immediately drizzle with the lemon juice. Toss gently to combine and allow to cool 3–5 minutes so it firms slightly for use as a topping.
Finishing & Garnish
Transfer the roasted cauliflower to a serving bowl or use directly as a topping for pizza, grilled meats, salads, or bowls. Sprinkle with the toasted nuts, chopped parsley, and grated Parmesan if using. Add red pepper flakes for a touch of heat if desired.
Adjust seasoning to taste: add a pinch more salt or a squeeze more lemon if the topping needs brightness. Serve warm or at room temperature.
