Salad Base
Prep the kale and cabbage
Remove thick ribs from kale leaves and stack leaves; roll and slice into roughly 1/2-inch ribbons. Place chopped kale in a large mixing bowl. Thinly shred red cabbage and add to the bowl with the kale.
Add tomatoes and garbanzos
Halve cherry tomatoes and drain/rinse the garbanzo beans. Add both to the bowl with the kale and cabbage and toss lightly to combine.
Lemon‑Feta Vinaigrette
Make the dressing
In a small bowl or jar combine 3 tbsp olive oil, 2 tbsp fresh lemon juice, 1 tbsp red wine vinegar, 1 tsp honey or maple syrup, 1 tsp Dijon mustard, 1 tsp minced garlic, 1 tsp salt, and 1 tsp black pepper. Add 1 tsp lemon zest. Whisk vigorously (or shake in a jar) until the dressing emulsifies.
Incorporate feta (optional)
If using feta, stir the 3 tbsp finely crumbled feta into the dressing so it softens and distributes. For a vegan version omit this step and proceed with the dairy‑free dressing.
Assemble & Finish
Massage the kale
Drizzle 1 tsp olive oil over the kale and gently massage the leaves with your hands for 1–2 minutes until they soften and darken. This reduces bitterness and helps dressing adhere.
Dress the salad
Pour about two‑thirds of the vinaigrette over the massaged kale, cabbage, tomatoes, and chickpeas. Toss thoroughly to coat. Taste and add more dressing as needed (reserve remaining vinaigrette to avoid overdressing).
Adjust seasoning and finish
Taste for salt, pepper, and brightness; add a squeeze of lemon if desired. Sprinkle the optional toasted pumpkin seeds or chopped walnuts for crunch and, if using, a little extra crumbled feta on top. Serve immediately or let sit 10–15 minutes to meld flavors—the kale will continue to soften.
