Prepare the Olive Oil Emulsion

In a bowl, whisk together the egg yolk and Worcestershire sauce. Slowly drizzle in the olive oil while whisking continuously until the mixture emulsifies. Set aside.

Toast the Mustard Seeds

In a dry skillet over medium heat, toast the black mustard seeds until they begin to pop. Remove from heat and set aside.

Combine the Beef Tartare

In a mixing bowl, combine the finely diced beef tenderloin, toasted mustard seeds, chopped chives, salt, and black pepper. Mix gently to combine.

Plate the Dish

On a plate, use a ring mold to shape the beef tartare. Carefully remove the mold, then drizzle the olive oil emulsion around the tartare. Garnish with crispy shallots on top.
