Using a sharp knife, cut the kingfish into small, bite-sized pieces and place them in a bowl.

Marinate the Fish

Add the lime juice, salt, and black pepper to the bowl with the fish. Mix gently to ensure the fish is well-coated. Let it marinate for about 15 minutes, allowing the acidity of the lime juice to 'cook' the fish.

After the fish has marinated, gently fold in the coconut milk, red onion, and chili jam until evenly mixed.
