Prepare the Mango Salsa

In a bowl, combine the diced mango, red onion, cilantro, and lime juice. Season with salt and pepper to taste. Set aside.

Prepare the Haricots Verts

Blanch the haricots verts in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Assemble the En Papillote

Preheat the oven to 375°F (190°C). On each piece of banana leaf, place a fillet of Aussie sea bass. Season with salt and pepper. Top with haricots verts and a generous spoonful of mango salsa.

Wrap and Bake

Fold the banana leaves over the fish to create a sealed packet. Place the packets on a baking tray and bake in the preheated oven for 15-20 minutes.

Serve

Carefully unwrap the banana leaves to release steam. Drizzle macadamia nut milk over the fish before serving.
