Prepare the Syrup

In a medium saucepan, combine the sugar and water. Heat over medium heat, stirring constantly until the sugar is fully dissolved. This should take about 5 minutes. Remove from heat and let it cool.

Mix the Ingredients

In a large mixing bowl, combine the cooled syrup with pomegranate juice, Prosecco, and lemon juice. Stir well until all ingredients are fully incorporated.

Chill the Mixture

Cover the bowl with plastic wrap and place it in the refrigerator. Chill the mixture for at least 2 hours until it is cold.

Freeze the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes. If you don't have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer.

Scrape and Freeze

If using the shallow dish method, stir the mixture every 30 minutes with a fork to break up ice crystals, until the sorbet is firm, about 3-4 hours.

Once the sorbet is ready, scoop it into serving bowls and garnish with fresh mint leaves before serving.
