Method

Place beef bones in a large stockpot and cover with cold water. Bring to a rapid boil over high heat and boil 10 minutes to remove impurities. Drain and rinse bones under running water; discard cloudy water and rinse the pot.

Return cleaned bones to the stockpot, add 4 liters of fresh cold water, the charred onion, ginger, smashed garlic, scallions (reserve some green parts for garnish), star anise, cinnamon stick, cloves and Sichuan peppercorns if using. Bring to a gentle simmer over medium-low heat. Skim foam for the first 15–20 minutes, then partially cover and simmer gently for 3 hours, occasionally skimming. For a richer broth, simmer up to 4–5 hours.

After the broth has simmered 2½–3 hours and the beef is nearly tender, remove bones and strain the broth through a fine-mesh sieve into a clean pot. Discard solids. Return strained broth to the stove and add light soy sauce, dark soy sauce, fish sauce, rock sugar, turmeric powder, white pepper and salt. Taste and adjust seasoning — the turmeric provides the warm golden hue; add more light soy or salt if needed. Keep broth at a gentle simmer while preparing beef and noodles.
Beef and finishing proteins
While the broth simmers, season the brisket/chuck with a pinch of salt. In a separate pot large enough to hold the brisket, brown the surface of the raw brisket in a tablespoon of neutral oil over medium-high heat for 4–6 minutes to develop color (optional). Add enough of the strained broth to just cover the brisket, bring to a simmer, cover and braise gently for 1½–2 hours until fork-tender. Remove brisket, rest 10 minutes, then slice thinly against the grain into bite-sized pieces.
If using thinly sliced sirloin or beef shank for finishing, blanch the slices briefly (10–15 seconds) in simmering seasoned broth just before assembling bowls so they cook through but remain tender. Toss the sliced finishing beef with sesame oil and a pinch of salt if desired.
Noodles and bowls
Bring a separate pot of water to a rolling boil. Cook noodles according to package directions until al dente (fresh 2–4 minutes, dried 6–8 minutes). Drain and rinse briefly under hot water to remove excess starch and prevent sticking.
Blanch the bok choy (or spinach) and bean sprouts in the noodle pot for 20–30 seconds until bright green and just tender; drain.
To assemble (serves 4): Divide noodles among 4 bowls. Top each with braised brisket slices (about 200 g total per serving divided), a portion of the thinly sliced finishing beef (about 50 g per bowl), blanched bok choy and bean sprouts. Ladle the hot golden broth over the noodles and toppings, ensuring the thin beef slices are cooked by the hot liquid.

Finish each bowl with chopped cilantro, sliced scallion greens, a drizzle of chili oil to taste and a lime wedge on the side. Offer extra fish sauce, soy, or chili oil at the table.
