Oysters
Chill and prepare serving bed
Place crushed ice or a thick layer of rock salt on a serving platter or individual plates; keep refrigerated until ready to serve so oysters sit cold and stable on the bed.
Shuck oysters
Using a clean oyster knife and a thick towel or glove, hold each oyster cup-side down and insert the knife at the hinge. Twist to pop the hinge, slide the blade along the top shell to cut the muscle, remove the top shell, and then slide the blade under the oyster to detach it from the bottom shell while retaining the liquor. Inspect and remove any shell fragments. Arrange oysters on the chilled ice bed with the liquor in the shell.
Keep oysters on the ice until serving. Do not leave at room temperature for more than 30 minutes.
Kimchi Mignonette
Prepare kimchi
Place the kimchi in a fine mesh sieve and press or squeeze with the back of a spoon to remove excess liquid. Finely mince the drained kimchi so pieces are small enough to sit on an oyster without overwhelming it.
Combine ingredients
In a small bowl, whisk together rice vinegar, mirin, lime juice, and sugar until the sugar dissolves. Add the minced kimchi, finely minced shallot, sea salt, and freshly ground black pepper. Whisk to combine, then add the neutral oil and whisk again to emulsify slightly. Taste and adjust seasoning — add up to 1/2 tsp more sugar if too acidic, or up to 1/2 tsp more lime juice if you want brighter acidity.
Let the mignonette rest at room temperature for 10–15 minutes to allow flavors to meld, then refrigerate if not using immediately (can be made up to 24 hours ahead).
Lime Finish
Zest and garnish
Just before serving, sprinkle a small pinch of finely grated lime zest over each oyster or the mignonette to add aromatic lift. Place a small spoonful (about 1/2 teaspoon) of kimchi mignonette on each oyster, or serve the mignonette in a small bowl for guests to spoon themselves. Garnish each oyster with a tiny sliver of micro cilantro or chive if using, and pass extra lime wedges.
Serve immediately while oysters are chilled. Discard any oysters that do not close when tapped (if using live whole oysters) or that smell off.
