Shrimp
Prepare shrimp
If shrimp are frozen, thaw overnight in refrigerator or under cold running water until pliable. Rinse shrimp under cold water and pat dry. If shrimp are not already peeled and deveined, peel shells leaving tails on if desired and remove the vein with a paring knife. Set shrimp aside chilled.
Fill a large bowl with ice and cold water to create an ice bath; set nearby to stop cooking immediately after steaming.
Poaching / Steaming Liquid
In a medium pot or deep skillet (large enough to hold shrimp in a single layer or in a steamer basket), combine water, white wine (if using), kosher salt, the juice and zest of the lemon, bay leaves, peppercorns, smashed garlic and parsley sprigs. Bring mixture to a gentle boil over medium-high heat.
Once the liquid reaches a boil, reduce heat to maintain a vigorous simmer. If using a steamer basket, put the basket in place and add shrimp in a single layer; if not, add shrimp directly to the simmering liquid (poaching).
Steam or poach shrimp until they turn opaque and curl into a loose C shape — about 2 to 4 minutes for large shrimp (16/20), depending on size. Do not overcook; shrimp cook very quickly.
Pat shrimp dry and transfer to a serving platter. Chill until ready to serve, or serve warm if preferred. Sprinkle chopped parsley over shrimp and arrange lemon wedges around platter.
Cocktail Sauce (makes about 1 cup)
In a small bowl combine ketchup, prepared horseradish, lemon juice, Worcestershire sauce, hot sauce, and black pepper. Taste and adjust horseradish and hot sauce for desired heat. Cover and chill until serving.
Spoon cocktail sauce into a small bowl or ramekin and place on the shrimp platter for dipping.
