Prepare crab and aromatics

Gently pick through the lump crabmeat to remove any shells. Place crabmeat in a large bowl and lightly flake with a fork so lumps remain but are easier to shape. Add chopped parsley, sliced green onion, and lemon zest.

Make binding mixture

In a small bowl whisk together mayonnaise, beaten egg, Dijon mustard, Worcestershire sauce, Old Bay, salt, and pepper until smooth.

Pour the binding mixture over the crab and gently fold in the breadcrumbs until mixture just holds together. Avoid overmixing to keep the balls tender. If mixture seems too wet, add up to 1 tablespoon more breadcrumbs; if too dry, add 1 teaspoon mayonnaise.

Forming & Coating

Chill the crab mixture in the refrigerator for 20 minutes to firm up slightly — this makes forming easier (optional but recommended).

Shape the mixture into 1-inch balls (about 1 tablespoon each). You should get roughly 24–30 mini crab balls from this recipe depending on size.

Set up a three-bowl station: flour in the first bowl, beaten egg in the second, and panko breadcrumbs in the third. Lightly roll each crab ball in flour, tap off excess, dip into beaten egg, then coat evenly with panko. Place coated balls on a tray and rest 5 minutes to set.

Frying

Pour oil into a heavy skillet or Dutch oven to a depth of about 1 inch and heat over medium-high until the temperature reaches 350°F (175°C) or a small breadcrumb sizzles immediately when dropped in.

Fry crab balls in batches — do not overcrowd — for 2 to 3 minutes, turning as needed, until golden brown and crisp on all sides. Use a slotted spoon to transfer to a wire rack set over a baking sheet or paper towel-lined plate to drain. Maintain oil temperature between 325–350°F by adjusting heat as needed.

If desired, keep finished crab balls warm in a 200°F (95°C) oven while you finish remaining batches.

Cocktail Sauce & Finish

While frying, make the cocktail sauce: combine ketchup, prepared horseradish, lemon juice, Worcestershire, hot sauce (if using), and a pinch of salt in a small bowl. Taste and adjust horseradish or hot sauce to your preference.

Arrange crab balls on a platter, sprinkle with chopped parsley, and serve with lemon wedges and the cocktail sauce for dipping.
