Pat the shrimp dry with paper towels. If shells still have veins, ensure they are deveined. Leave tails on for presentation and handling.

Season the shrimp evenly with 1 tsp salt, 1 tsp black pepper and 1 tbsp fresh lime juice. Toss gently and set aside for 5–10 minutes while you prepare the breading station.

Prepare dry and wet mixes

Place the 1 cup flour in a shallow bowl or plate. In a second shallow bowl, whisk the 2 large eggs with 3 tbsp milk until smooth. On a third plate, combine 1 cup panko, 1 cup shredded coconut, 1/2 cup dried shredded coconut (if using), 1 tsp sugar (optional), 1/2 tsp salt and 1/4 tsp black pepper; mix to distribute evenly.

Set up the three stations in order: flour, egg wash, coconut-panko mixture. This allows an efficient dredge: flour → egg → coconut.

Working in batches (to avoid overcrowding), lightly dredge each shrimp in flour, shaking off excess. Dip into the egg wash, letting excess drip back into the bowl. Press thoroughly into the coconut-panko mixture so the shredded coconut and panko adhere well, covering all sides except the tail.

Place breaded shrimp on a wire rack set over a baking sheet to rest for 10 minutes — this helps the coating set and reduces loss during frying.

Frying

Pour about 3 cups of oil into a deep skillet or Dutch oven to a depth of about 1–1.5 inches (enough to shallow-fry) or use a deep fryer set to 350°F (175°C). Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread; it should brown in about 45–60 seconds.

Fry the shrimp in small batches (4–6 at a time depending on pan size) so the oil temperature remains steady. Cook 2.5–3 minutes per side or until the coating is golden brown and shrimp are opaque and cooked through (internal temperature ~120–130°F). Turn once with tongs to brown evenly.

Use a slotted spoon or tongs to transfer cooked shrimp to a wire rack or paper towel–lined plate to drain. Keep finished shrimp warm in a 200°F (95°C) oven on a baking sheet while you finish remaining batches.

If oil temperature drops below 325°F, allow it to return to 350°F before adding the next batch to prevent greasy shrimp.

Dipping sauce (Sweet Thai Chili) & Serving

If using store-bought sweet Thai chili sauce, pour 1/2 cup into a small serving bowl. For a simple enhancement, stir in 1 tsp lime juice and a pinch of chopped cilantro or sliced green onion.

Arrange the hot coconut shrimp on a platter with lime wedges. Serve immediately with the sweet Thai chili sauce on the side for dipping.

Leftovers: Cool completely, refrigerate in an airtight container up to 2 days. Re-crisp in a 375°F (190°C) oven for 6–8 minutes.
