Grilled Sausages & Seasoning

    Preheat & Prepare

    Preheat a grill or grill pan to medium-high (about 400°F / 200°C). Pat sausages dry, prick once or twice with a fork to prevent bursting, then brush lightly with 2 tbs olive oil and season all over with 1 tsp kosher salt and 1 tsp black pepper.

    Grill Sausages

    Place sausages on the preheated grill. Cook 12–15 minutes, turning every 3–4 minutes so they brown evenly and reach an internal temperature of 160°F (71°C) for pork sausages (or per package instructions). Remove from grill, tent with foil and let rest 5 minutes before slicing into 1/2-inch pieces on a diagonal.

Roasted Red Peppers & Onions

    Roast Peppers

    While sausages grill, place whole red bell peppers directly over a gas flame, under a broiler rack, or on the grill. Roast until skins are blackened and blistered all over, turning occasionally, about 10–12 minutes. Transfer peppers to a bowl and cover tightly with plastic wrap or a lid for 10 minutes to steam (this loosens skins).

    Peel & Slice

    When cool enough to handle, peel off skins, remove stems and seeds, and slice peppers into 1/2-inch strips. Slice the onion into 1/4-inch half-moons.

    Sauté Peppers & Onions

    Heat 2 tbs olive oil in a large skillet over medium heat. Add sliced onion and cook 5–7 minutes until softened and beginning to caramelize. Add minced garlic and cook 30 seconds until fragrant. Add roasted pepper strips, 1 tbs red wine vinegar, 1 tsp dried oregano, 1 tsp salt, and 1/2 tsp black pepper. Cook 2–3 minutes to meld flavors. Keep warm off heat.

Pasta

    Cook Pasta

    Bring a large pot of salted water to a rolling boil. Add 12 oz pasta and cook until al dente according to package directions (usually 9–12 minutes). Before draining, reserve 1 cup of starchy pasta cooking water, then drain the pasta.

    Finish Pasta

    Return hot pasta to the pot or a large skillet over low heat. Add 1 tbs extra-virgin olive oil and 1/2 cup grated Parmesan. Add 1/4–1/2 cup of the reserved pasta water as needed to loosen and create a light sauce. Season to taste with a pinch of salt and pepper.

Vegetables (Sautéed)

    Sauté Veggies

    In a separate skillet, heat 1 tbs olive oil over medium-high. Add sliced zucchini and sauté 3–4 minutes until just tender and lightly browned. Add halved cherry tomatoes and cook 2 minutes until they begin to soften. Add baby spinach and cook 1–2 minutes until wilted. Season with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat.

    Combine Veggies with Pasta

    Add the sautéed vegetables to the finished pasta and toss gently to combine. If the pasta seems dry, add another tablespoon or two of reserved pasta water.

Assembly & Garnish

    Combine Sausage and Peppers

    Fold the sliced grilled sausages and the roasted pepper-and-onion mixture into the pasta and vegetables. Gently toss to distribute evenly, warming through for 1–2 minutes over low heat if needed.

    Finish & Serve

    Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Stir in torn basil and squeeze in juice from 1/2 lemon if using. Serve immediately with extra grated Parmesan at the table.
