Cheese preparation

    Remove the mozzarella from the refrigerator and pat dry with paper towels. Cut the block into 12 equal sticks or 12 slices about 1/2" thick (depending on desired shape). Lightly sprinkle salt and black pepper on each piece.

    Place the cut pieces on a tray lined with parchment and freeze for at least 30 minutes. Freezing helps keep the cheese from melting out during frying.

Breading and coating

    Set up three shallow bowls for a classic breading station: bowl 1 — flour; bowl 2 — whisk together eggs and milk until homogenous; bowl 3 — mix breadcrumbs, grated Parmesan, Italian seasoning, and garlic powder.

    Dredge each chilled mozzarella piece first in flour, shaking off excess; then dip into the egg mixture, letting extra drip off; finally press into the breadcrumb mixture until well coated. For extra-crispy and secure coating, repeat the egg and breadcrumb steps once (double-coat). Place breaded pieces back on a tray and refrigerate for 15 minutes or return to the freezer for 10 minutes to firm up.

Frying

    Pour oil into a large heavy skillet or Dutch oven to reach about 1 to 1.5 inches deep (approximately 2–3 cups depending on vessel). Heat oil over medium-high heat until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in about 30–45 seconds.

    Fry the breaded mozzarella in batches of 3–4 pieces so the oil temperature stays steady. Carefully lower pieces into hot oil and fry until golden brown on all sides, about 1 to 1.5 minutes per side (total 2–3 minutes). Turn gently with tongs or a spider to avoid breaking the coating.

    Use a slotted spoon to transfer fried mozzarella to a wire rack set over a baking sheet or paper towels to drain. Let rest 1–2 minutes before serving. Keep warm in a 200°F (95°C) oven for short periods if needed, but do not overcrowd or keep too long to avoid over-melting the cheese.

Marinara sauce (choice)

    Quick stovetop marinara

    Heat 2 tbsp olive oil in a small saucepan over medium heat. Add the chopped onion and cook until softened, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant. Stir in crushed tomatoes and tomato paste. Bring to a simmer, then add sugar, dried basil, salt, and pepper. Simmer gently, uncovered, for 10–12 minutes to thicken slightly. Taste and adjust seasoning. Keep warm until ready to serve.

Garlic-anchovy sauce (choice)

    Quick garlic-anchovy emulsion

    Warm 4 tbsp olive oil in a small skillet over low heat. Add the thinly sliced garlic and cook gently until just fragrant and barely golden, about 1–1.5 minutes — do not let it brown. Add the chopped anchovy fillets and stir until they dissolve into the oil, about 30–45 seconds. Stir in red pepper flakes, remove from heat, then finish with lemon juice and chopped parsley. Transfer to a small bowl and keep warm. This sauce is savory and salty — no additional salt usually needed.

Finishing and plating

    Choose either the marinara or garlic-anchovy sauce (or offer both). Spoon a few tablespoons of sauce onto each serving plate or into a small dipping bowl.

    Arrange 3–4 pieces of fried mozzarella per serving on the plate. Sprinkle with grated Parmesan and torn basil leaves if using. Serve immediately while cheese is hot and the exterior is crisp.
