Prepare chicken
Slice each chicken breast horizontally to make 2 thin cutlets (or butterfly and pound to 1/4" thickness). Pat dry with paper towels. Season both sides with 1 tsp kosher salt and 1 tsp black pepper.

Set up dredging station
Put the flour in a shallow dish. In another shallow bowl, whisk the 2 eggs with 2 tablespoons milk until combined.

Dredge chicken
Coat each cutlet lightly in flour, shake off excess, dip into the egg mixture, then return to the flour for a light second coating. Shake off excess flour and set on a plate.

Cook chicken
Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and 1 tablespoon of the butter. When butter foams and oil shimmers, add chicken cutlets (work in batches if needed). Cook 3 minutes per side until golden-brown and just cooked through (internal temp ~165°F / 74°C). Transfer to a warm plate and tent with foil. Reserve any browned bits in the pan for sauce.

Sauté mushrooms
Reduce heat to medium. Add remaining 1 tablespoon butter to the same skillet. Add sliced mushrooms in a single layer and cook without moving for 2–3 minutes to brown, then stir and cook another 2 minutes until soft and browned.

Deglaze with Marsala
Pour in 3 tablespoons Marsala wine and bring to a gentle simmer, scraping the pan to lift browned bits. Allow wine to reduce by about half, about 1–2 minutes.

Build sauce
Add 3 tablespoons chicken stock and simmer 1–2 minutes. Stir in 3 tablespoons heavy cream and 1 teaspoon fresh thyme leaves. Cook until sauce is slightly thickened, about 1–2 minutes. Taste and season with 1 teaspoon salt and 1/2 teaspoon black pepper, adjusting to taste.

Finish
Return the cooked chicken cutlets and any accumulated juices to the skillet, spoon the sauce and mushrooms over them, and simmer for 1–2 minutes to rewarm and meld flavors. Stir in 1 tablespoon chopped fresh parsley just before serving.
