Heroé Sandwich — Protein & Main Fillings

Heroé Sauce

    Make the Heroé sauce

    In a small bowl combine mayonnaise, Dijon, whole-grain mustard, smoked paprika, hot sauce, lemon zest, honey, minced garlic, salt and pepper. Whisk until smooth and refrigerate while you prepare the sandwich. Taste and adjust seasoning — sauce should be tangy with a touch of sweetness and smoky heat.

Protein Preparation

    Prep the filet mignon

    Pat the filet mignon dry with paper towels. Season both sides evenly with 1 tsp kosher salt and 1 tsp freshly ground black pepper. Let sit at room temperature for 15 minutes.

    Cook the filet mignon

    Heat 1 tbsp olive oil and 1 tbsp butter in a heavy skillet (cast-iron preferred) over medium-high heat until shimmering. Add the filet and sear undisturbed 2.5–3 minutes per side for medium-rare (internal temp 125–130°F / 52–54°C). For medium, add ~1 minute per side. During the last 30 seconds, add 1/2 tbsp butter and baste the steak with a spoon. Transfer to a cutting board and rest 5–7 minutes, then slice thinly against the grain into sandwich-ready pieces.

    Warm and season lobster

    If lobster is cooked and chilled, warm gently: heat 1 tbsp butter with minced garlic in a small skillet over medium-low, add lobster meat and toss 1–2 minutes just until warm (do not overcook). Add 1 tsp lemon juice, pinch of salt and a grind of pepper. Remove from heat.

Crispy Onions & Avocado

    If making quick homemade crispy onions (optional)

    Thinly slice 1 small onion. Toss slices in 1/4 cup flour, shake off excess, and fry in 1/4 cup vegetable oil over medium-high heat in a shallow pan in batches until golden and crisp, about 1–2 minutes per side. Drain on paper towels and season lightly with salt. Alternatively use store-bought crispy fried onions.

    Prep avocado

    Halve, pit and slice the avocado. Toss gently with 1 tsp lemon juice to prevent browning. Season slices lightly with a pinch of salt.

Assemble & Melt Cheese

    Prepare rolls

    Split the rolls horizontally. Lightly butter the cut sides with remaining 1 tbsp butter. Place rolls, cut side up, on a baking sheet.

    Layer fillings and melt cheese

    Preheat broiler on high with rack about 6 inches from the heat. On the bottom halves of each roll spread 1–1.5 tbsp Heroé sauce. Arrange sliced filet mignon evenly, then spoon warmed lobster meat over the steak. Top the meat with thin slices of sharp cheddar (approximately 2 oz per sandwich). Place the baking sheet under the broiler just long enough for the cheese to melt and bubble, about 1–2 minutes — watch closely to avoid burning.

    Add avocado and crispy onions

    Remove from oven. Top melted cheese with avocado slices and a generous handful (about 1/4 cup) of crispy onions. Add more Heroé sauce to the top roll if desired and place the top half on the sandwich.

    Press the sandwich gently, slice in half on a bias, and garnish with chopped parsley if using. Serve immediately while cheese is melted and lobster is warm.
