Chill glassware

Place the three tasting glasses in the refrigerator or freezer for 5–10 minutes prior to serving so they are slightly chilled. This keeps the mezcals at an ideal temperature without masking aromas.

Prepare accompaniments

Cut three lime wedges and three orange slices. Pour the sparkling water into a small carafe or bottle and set out 6 plain crackers or unsalted tortilla chips on the tray. Place a small pinch (about 1 teaspoon) of coarse or flaked salt in a small ramekin or on the serving tray.

Measure and pour

Remove chilled tasting glasses from the fridge. Using a jigger or measuring tool, pour 1 oz of Neta Tequilana into the first glass, 1 oz of El Jolgorio Tepezate into the second glass, and 1 oz of 5 Sentidos Puntas into the third glass. Arrange the glasses left-to-right in the order you want the guest to taste them (typically lightest/cleanest to most complex/smokiest).

Label and present

If desired, place a small card or sticker in front of each glass with the mezcal name. Present the tray with the mezcals, lime and orange slices, salt, crackers, and the sparkling water carafe. Explain the recommended tasting order and the palate-cleansing steps.

How to taste each mezcal

Encourage the guest to first observe the color (clear or lightly hued). Swirl gently to release aromas, then bring the glass to the nose and inhale shallowly to note primary aromas (agave, smoke, vegetal, floral). Take a small sip and let it coat the tongue; note texture, sweetness, smoke, spice, and finish. Optionally take a second, slightly larger sip to examine the finish.

Using the accompaniments

Between each sample, cleanse the palate by sipping a small amount (30–60 ml) of chilled sparkling water and eating one plain cracker or a bite of unsalted chip. Use the lime wedge and a light pinch of salt only if you want to contrast or heighten flavor — do not over-salt. The orange slice can be used after tasting all three to refresh the palate and close the tasting.

Order suggestion

Taste in the following recommended order: 1) Neta Tequilana (often brighter/cleaner), 2) El Jolgorio Tepezate (more complex, mineral/earth), 3) 5 Sentidos Puntas (pronounced smoke/nuance). Adjust based on actual bottle profiles if needed.

Service notes & cleanup

Keep extra sparkling water chilled and offer refills. Remove spent lime rinds and used crackers after the flight. Rinse glasses with warm water and allow to air dry; avoid soap if guests will continue tasting other spirits back-to-back to prevent scent contamination.
