Pistachio Sponge Cake

Prepare and preheat
Preheat the oven to 350°F (175°C). Butter and line the bottom of a 9x13-inch baking pan with parchment; butter the parchment. Sift together the all-purpose flour, almond/pistachio meal, baking powder, and salt into a bowl and set aside.

Cream butter and sugar
In a large bowl or stand mixer fitted with the paddle, cream the softened butter and granulated sugar on medium speed until pale and fluffy, about 3–4 minutes.

Combine wet and dry
Reduce mixer speed to low. Alternately add the dry ingredients and the 1/2 cup whole milk in three additions, beginning and ending with the dry ingredients. Mix until just incorporated; avoid overmixing.

Tres Leches Soak

Whisk together whole milk, evaporated milk, sweetened condensed milk, heavy cream, and the pistachio syrup/paste until homogeneous. Taste and adjust sweetness — the soak should be sweet but balanced. Slowly pour the milk mixture evenly over the cooled cake, allowing it to absorb for at least 30 minutes. For deeper soak, cover and refrigerate 4 hours or overnight.
Pistachio Praline (Crunch)

Line a baking sheet with parchment or silicone. In a medium saucepan, combine granulated sugar, water, and corn syrup and bring to a simmer over medium heat. Without stirring, gently swirl the pan until the sugar dissolves and the mixture turns a deep amber (about 8–10 minutes). Remove from heat, stir in the roasted pistachios quickly to coat, then add butter and salt and stir just to combine. Pour the hot praline onto the prepared sheet and spread thinly with a spatula. Let cool completely, then break into small shards or pulse briefly in a food processor for finer crunch. Reserve.
Pistachio Nougatine (Thin brittle pieces)

Line another baking sheet with parchment. In a small saucepan, cook the sugar with glucose (or corn syrup) over medium heat until it caramelizes to a golden amber. Remove from heat, stir in butter, then quickly mix in the chopped pistachios and a pinch of salt. Pour and spread thinly to form a very thin sheet. When cool, break into decorative pieces. Keep these separate from praline shards; nougatine will be thinner and used for garnish.
Passionfruit Whipped Cream & Finishing

Make passionfruit cream
Strain passionfruit pulp if you want a smoother cream (reserve seeds for garnish if desired). In a chilled bowl, whip the cold heavy cream with powdered sugar, vanilla, and salt on medium-high speed until it reaches soft to medium peaks. Gently fold in the passionfruit pulp (about 1/3 cup), tasting as you go: if pulp is very tart, add a little more powdered sugar (up to 1–2 tbs) to balance. Do not overwhip; the final cream should be spreadable.

Assemble cake
If you soaked the cake and refrigerated it, bring it out 15 minutes before assembling. Spread about two-thirds of the passionfruit whipped cream evenly over the soaked cake using an offset spatula. Reserve remaining cream for piping or additional topping.

Garnish
Sprinkle half of the pistachio praline shards across the top for crunch, and arrange nougatine pieces decoratively. Scatter the finely chopped shelled pistachios around the edges and over the center. Pipe rosettes or dots of the remaining passionfruit whipped cream if desired, and top a few with fresh passionfruit halves or a spoonful of seeds for bright tart pops. Chill the assembled cake at least 1 hour before serving to let the flavors meld and the cream set.

Serve
Cut into squares and serve chilled. Each slice will have moist cake, floral pistachio notes, bright passionfruit cream, and crunchy praline/nougatine contrasts.
