Prepare glass & garnish

Optional salt or mezcal rinse

If using salt or sal de gusano, rub the lime wedge around the rim of a rocks glass or coupe and dip the rim into a shallow plate with coarse sea salt or sal de gusano. Alternatively, pour about 1/4 tsp mezcal into the glass, swirl to coat the inside, then discard the excess for a light mezcal rinse.

Set the prepared glass aside to chill while you make the cocktail.

Measure and combine

Add 2 oz espadín mezcal, 0.75 oz fresh lime juice, 0.5 oz agave nectar, and 0.25 oz orange liqueur into a cocktail shaker.

Add bitters (optional)

If using smoked chile or mezcal bitters, add 2 dashes to the shaker to deepen smokiness and add complexity.

Add ice and shake

Fill the shaker with about 1 cup of ice, secure the lid, and shake vigorously for 12–15 seconds until well chilled (exterior of shaker becomes frosty).

Strain

Using a strainer, double-strain (if you prefer) into the chilled prepared glass over fresh ice (rocks) or neat into a coupe.

Finish & serve

Garnish with a lime wheel or wedge on the rim. Optionally sprinkle a tiny pinch (about 1 pinch) of smoked chile powder on the lime or the drink surface for an extra smoky-kick and aroma.

Serve immediately. Sip slowly to enjoy the smoky vegetal notes of the espadín mezcal balanced by bright lime and smooth agave sweetness.
