1. Cook bacon

If using bacon: place 3 bacon strips in a cold skillet, turn heat to medium, and cook 6–8 minutes, flipping occasionally, until crisped to your liking. Transfer bacon to a paper towel-lined plate and keep warm. Reserve 1 tablespoon of bacon fat in the skillet (drain excess) for cooking eggs if desired.

2. Cook sausage patties

If using sausage patties: heat a skillet over medium, add the 2 sausage patties and cook 4–6 minutes per side (internal temp 160°F / 71°C) until browned and cooked through. Transfer to a plate and keep warm. Wipe skillet clean and reserve 1 tablespoon drippings for the eggs or use butter.

Biscuit

3. If using store-bought frozen biscuit: bake according to package directions (typically 12–15 minutes at 375°F / 190°C). If using refrigerated dough: bake per package (usually 10–12 minutes at 400°F / 200°C). For homemade biscuit: bake 12–15 minutes at 425°F / 220°C until golden. Warm the butter and brush 1 tsp onto the hot biscuit just before serving.

4. Cook eggs to order (two eggs): heat a nonstick skillet over medium-low and add 1 tablespoon butter or reserved fat. For sunny-side-up: crack eggs into skillet, season with 1/8 tsp salt and 1/8 tsp pepper, cover and cook 2–4 minutes until whites set but yolks remain runny. For over-easy/medium/hard: cook until whites set, gently flip with a spatula and cook 10–30 seconds (over-easy), 45–60 seconds (over-medium), or 2–3 minutes (over-hard) more depending on desired yolk doneness. For scrambled: whisk eggs with salt and pepper, melt butter in skillet over medium-low, pour eggs in and stir gently until softly set, 2–3 minutes. Keep eggs warm.

Assembly & Serve

5. Place the warm biscuit on a plate. Arrange the cooked bacon (or two sausage patties) alongside the biscuit. Gently place the two cooked eggs on the plate or on top of the biscuit if preferred. Brush the biscuit with the 1 tsp butter. Sprinkle chopped chives over eggs if using and offer hot sauce on the side.

6. Serve immediately while eggs are hot and biscuit is warm. Provide salt and pepper at the table to taste.
