    Make custard

    In a wide shallow bowl or baking dish large enough to hold a slice, whisk together whole milk, heavy cream, eggs, granulated sugar, vanilla extract, ground cinnamon and salt until smooth and slightly frothy.

    Soak bread

    Preheat a large skillet over medium heat. Working two slices at a time, place a slice of brioche into the custard and let soak 20–30 seconds per side until the bread is saturated but still holds together. Drain briefly on a wire rack.

    Cook

    Add 1 tablespoon of butter to the hot skillet. When it foams, add soaked slices (do not overcrowd). Cook 3–4 minutes per side, or until deep golden brown and cooked through. Adjust heat as needed to avoid burning. Transfer cooked slices to a warm oven (200°F / 95°C) to keep warm while you cook remaining bread, adding more butter as needed.

Peanut Butter–Cream Cheese Fluff

    Prepare fluff

    While French toast cooks, beat softened cream cheese in a medium bowl until smooth. Add creamy peanut butter, powdered sugar and vanilla extract. Beat with a hand mixer or whisk until fully combined and fluffy. If mixture is too thick for spreading, add up to 1 tablespoon milk and beat again until spreadable but still thick.

    Assemble layers

    Spread about 1–1.5 tablespoons of the peanut buttercream cheese fluff onto four of the warm French toast slices. Top each with another warm slice to create a sandwich (layered French toast). Gently press to adhere.

Toppings & Finish

    Prepare bananas

    Slice bananas on the diagonal into 1/4-inch slices. If you prefer caramelized bananas, heat 1 tablespoon butter in a small skillet over medium-high heat, add banana slices in a single layer and cook 30–60 seconds per side until lightly golden and softened. Remove from heat.

    Plate and garnish

    Place layered French toast onto serving plates. Fan banana slices across the top. Dust lightly with powdered sugar, add a generous dollop or piping of whipped cream, and sprinkle chopped roasted peanuts if using. Serve immediately with maple syrup on the side.
