Pancake batter
1. In a medium bowl whisk together flour, baking powder, sugar and salt until evenly combined.
3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Small lumps are fine — do not overmix.
Cooking & shaping the Mickey Mouse pancake
4. Preheat griddle
Heat a nonstick skillet or griddle over medium-low to medium heat (around 325–350°F / 160–175°C). Lightly brush with oil or melted butter.
5. For a large Mickey head pour about 1/3 cup of batter into the center of the skillet to form the main circle (head). Allow batter to spread naturally; use the back of a spoon to even the edge if needed.
6. For the ears, use about 1 tablespoon to 1.5 tablespoons of batter for each ear. Pour two smaller circles slightly overlapping the top left and top right of the large circle so they attach as ears. Work quickly so the batter sets together.
7. Cook until bubbles form across the surface and edges look set, about 2–3 minutes. Carefully flip using a thin spatula, supporting both an ear and head if possible, and cook the second side until golden, about 1–2 minutes more.
8. Transfer pancake to a plate and repeat with remaining batter to make 1–2 more Mickey pancakes depending on how many you make per serving. Keep warm in a low oven (200°F / 95°C) on a tray while finishing.
9. If using powdered sugar or fruit for eyes/nose, dust the head lightly and place two small berries or banana slices for eyes and a third for the nose. Serve with maple syrup on the side.

10. Bacon: While pancakes cook, heat a skillet over medium heat. Lay bacon strips in a single layer and cook 3–4 minutes per side until desired crispness. Drain on paper towels and keep warm.
11. Breakfast or turkey sausage links: Heat a skillet over medium heat with a small drizzle of oil. Add links and cook, turning frequently, until browned and cooked through (about 8–10 minutes for raw links). Lower heat if they brown too quickly. Keep warm.
Choice of side — scrambled eggs
12. Crack 2 eggs into a bowl, add 2 tablespoons milk and 1/4 tsp black pepper and 1/2 tsp salt (adjust to taste). Whisk until blended and slightly frothy.
13. Heat a nonstick skillet over medium-low and add about 1 teaspoon butter. Pour in egg mixture and let it sit undisturbed for 10–15 seconds. Gently push cooked edges toward the center with a spatula, tilting the pan to let uncooked egg run underneath.
14. Continue gently folding until eggs are softly set and slightly creamy, about 1–2 minutes. Remove from heat immediately to avoid overcooking and keep warm.
Plating
15. Place one Mickey pancake on the plate. Arrange the chosen side (2 bacon strips, or 2 sausage links, or scrambled eggs) to one side of the pancake so the plate looks balanced and kid-friendly.
16. Add berries or banana pieces as facial features if desired, dust lightly with powdered sugar, and serve maple syrup on the side for dipping.
