Prepare the Tomato Dashi

In a pot, combine ripe tomatoes, water, and a pinch of salt. Simmer for 20 minutes to create a flavorful broth. Strain and set aside.

Sauté the Beans

In a skillet, heat olive oil over medium heat. Add the summer beans and sauté for about 5 minutes until tender but still crisp. Season with salt and pepper. Remove from pan and set aside.

Cook the Pickerel

In the same skillet, add more olive oil if necessary. Season the pickerel fillets with salt and pepper. Cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through.

Assemble the Dish

On a plate, ladle some of the tomato dashi. Place the sautéed summer beans on top, followed by the cooked pickerel fillets. Garnish with fresh basil and cherry tomatoes.
