Chill a highball or Collins glass by filling it with ice and set aside while you build the drink.
In a cocktail shaker, add 2 oz gin, 0.5 oz Cherry Heering, 0.25 oz Bénédictine, 0.25 oz Cointreau (or triple sec), 0.75 oz fresh lime juice, 3 oz pineapple juice, 0.5 oz simple syrup, and 2 dashes Angostura bitters.
Fill the shaker with ice (about 1 cup) to properly chill and dilute the mixture.
Shake vigorously for 10–15 seconds until the shaker is frosty and the liquid is well chilled and slightly aerated.
Dump the ice from the chilled serving glass and strain the shaken cocktail into the glass over fresh ice (either a full Collins of ice or a few large cubes).
Garnish & Serve
Thread the maraschino cherry onto a pick and place it on the rim or drop it into the drink.
Add a pineapple wedge and optionally a pineapple leaf or cocktail umbrella for a classic presentation.
Serve immediately with a straw. Recommend lightly stir before drinking if left to sit.
