Prepare and preheat

Position racks in the center of the oven. Preheat oven to 350°F (175°C). Grease two 8- or 9-inch round cake pans, line bottoms with parchment, and grease parchment; lightly dust with flour or cocoa powder, tapping out excess.

Dry ingredients

In a large bowl, whisk together 2 1/2 cups all-purpose flour, 1 3/4 cups granulated sugar, 3 tablespoons unsweetened cocoa powder, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1 teaspoon fine sea salt until evenly combined.

Combine wet ingredients

In a separate large bowl or the bowl of a stand mixer fitted with the paddle, add 1/2 cup (1 stick) unsalted butter (softened) and 1/2 cup vegetable oil. Beat on medium speed until smooth and slightly aerated, about 1 minute. Add 2 large eggs one at a time, beating 20–30 seconds after each until incorporated. Mix in 2 teaspoons vanilla extract and 1 teaspoon distilled white vinegar. Add 1–2 teaspoons instant espresso powder if using, and stir to dissolve. Add 2 tablespoons red gel food coloring and combine until the batter has a uniform deep red color. Scrape down the bowl as needed.

Alternate wet and dry

With the mixer on low, add one-third of the dry ingredient mixture, then half of 1 cup buttermilk, then another third of the dry ingredients, then the remaining half of the buttermilk plus 1/2 cup sour cream, finishing with the remaining dry ingredients. Mix only until just combined after each addition to avoid overmixing. Stop and scrape the bowl; batter should be smooth and slightly thick. Adjust color with a little more red gel if desired.

Add vinegar (optional reactive lift)

If not already added with the wet ingredients, stir 1 teaspoon distilled white vinegar into the batter by hand—this reacts with the baking soda to boost rise and helps maintain a vivid red tone.

Divide and bake

Divide batter evenly between prepared pans (use a kitchen scale or measure by eye). Smooth tops with an offset spatula. Bake in the preheated 350°F (175°C) oven for 25–30 minutes, rotating pans halfway through, until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter) and cakes spring back lightly to the touch.

Cool

Allow cakes to cool in pans on a wire rack for 10–15 minutes. Run a thin knife around the pan edges, invert onto the rack, peel off parchment, and let cakes cool completely (at least 1 hour) before frosting. For easier assembly, wrap cooled layers in plastic and chill for 30 minutes to firm crumbs.

Soften and combine

Ensure cream cheese and butter are at room temperature. In a large bowl or stand mixer fitted with the paddle, beat 12 oz softened full-fat cream cheese and 1/2 cup softened unsalted butter on medium speed until smooth and homogenous, about 1–2 minutes.

Sweeten

With mixer on low, gradually add 3 cups powdered sugar, 1 cup at a time, allowing sugar to incorporate before adding more to avoid a cloud of sugar. Once added, increase speed to medium and beat until creamy. Add 1 teaspoon vanilla extract and 1/4 teaspoon fine sea salt. Taste and adjust salt or vanilla. If frosting is too soft, chill for 10–15 minutes and beat again; if too thick, add 1 teaspoon milk at a time until desired spreading consistency.

Final whip

Beat on medium-high for 20–30 seconds to make frosting light and spreadable, taking care not to overwhip which can make frosting runny.

Assembly & Finishing

Level and layer

If needed, level the tops of the cooled cake layers with a serrated knife or cake leveler. Place one layer on your serving plate or cake board. Pipe or spread about 1 to 1 1/2 cups of cream cheese frosting evenly over the first layer, leaving a small 1/4-inch margin at the edge to prevent frosting squeeze-out. Place the second layer on top, pressing gently to adhere.

Crumb coat

Apply a thin crumb coat of frosting (about 1/2 cup) over the top and sides to seal in crumbs. Chill the cake in the refrigerator for 20–30 minutes until the crumb coat is firm.

Final coat and decorate

Apply the remaining frosting to achieve a smooth final layer. Use an offset spatula or bench scraper for clean sides and top. Dust the top lightly with 1 teaspoon unsweetened cocoa powder if desired and press 1/2 cup chocolate shavings around the base or on top for decoration. Chill 15–30 minutes to set before slicing for cleaner slices.

Serve

Slice with a sharp, warm knife (dip in hot water and dry between cuts for cleaner slices). Serve at cool room temperature. Store leftovers covered in the refrigerator for up to 4 days; allow slices to come to room temperature for 20–30 minutes before serving for best texture.
