Cheddar Cheese Spread
Herb Cream & Chive Garnish
To Serve (optional)
Method
Cheddar Cheese Spread
Prepare cheese and base
Grate the sharp cheddar finely so it combines smoothly. In a mixing bowl, combine the softened cream cheese and unsalted butter. Beat with an electric mixer on medium speed for 1–2 minutes until smooth and slightly airy.
Fold in cheddar and season
Reduce mixer speed to low and add the grated cheddar in two additions, mixing until fully incorporated. Add sour cream and milk to loosen the texture, then mix in Worcestershire sauce, garlic powder, black pepper, and 1 tsp salt. Taste and adjust seasoning — if the mixture seems too thick, add up to 1 more tablespoon milk.
Chill to set
Transfer the cheddar spread to a serving bowl or form into a log on plastic wrap. Press surface smooth, cover tightly, and refrigerate for at least 1 hour to allow flavors to meld and the spread to firm up. Chilling also makes it easier to spread on crackers or bread.
Herb Cream & Chive Garnish
Make herb cream
In a small bowl, whisk the heavy cream lightly to just thicken (do not whip to peaks) — you want a pourable but slightly viscous cream. Stir in the finely snipped chives, parsley, dill, lemon zest, lemon juice, honey, 1/2 tsp salt, and 1/4 tsp black pepper. Taste and adjust lemon, salt, or honey to balance brightness and seasoning.
Assemble garnish
Spoon 2–3 tablespoons of the herb cream over the chilled cheddar spread just before serving, or serve the herb cream in a small bowl alongside for guests to add as desired. Reserve a little cream to drizzle over individual portions if plating for an appetizer course.
Serving Suggestions
For best texture, remove the spread from the refrigerator 10–15 minutes before serving so it softens slightly. The herb cream adds brightness and moisture — offer extra on the side for guests who prefer a saucier bite. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
