Marinating the Halibut

Prepare the Halibut

Cut the halibut fillets into small, bite-sized cubes and place them in a glass or ceramic bowl.

Cure the Halibut

Pour the lime juice over the halibut cubes, ensuring all pieces are submerged. Cover the bowl with plastic wrap and refrigerate for about 30-45 minutes until the fish turns opaque and is 'cooked' by the acidity of the lime juice.

Prepare the Marinade

In a separate bowl, mix the passionfruit pulp, diced pineapple, mango, cucumber, and finely chopped red onion. Stir gently to combine.

Add the Chilies and Cilantro

Incorporate the chopped cilantro, Fresno and serrano chilies into the marinade mixture, and stir gently to combine.

Combine Halibut with Marinade

Once the halibut is cured, drain excess lime juice from the fish. Add the halibut to the marinade and mix gently until well combined.
