Prepare sauerkraut
Place sauerkraut in a fine mesh strainer and rinse briefly under cold water to remove excessive brine. Squeeze out excess moisture and transfer to a small bowl. Stir in 1 tablespoon unsalted butter and 1/4 teaspoon black pepper. Set aside and keep warm.
Cook sausages (pan-fry method)
Heat a large skillet over medium heat and add 1 tablespoon unsalted butter and 1 teaspoon olive oil. When the butter foams, add the sausages in a single layer. Cook 10–12 minutes, turning every 2–3 minutes until browned on all sides and cooked through (internal temp 160°F/71°C for pork). If using links thicker or smoked kielbasa, adjust time to 12–15 minutes.
Alternative: poach then sear (optional)
For evenly cooked sausages, place sausages in a shallow pan, add enough water to cover halfway, and simmer gently 8–10 minutes. Remove, drain, then sear in a hot skillet with 1 tablespoon butter for 2 minutes per side to brown.
Buns
Option A: Toast in oven — place buns cut-side up on a baking sheet and toast 5–7 minutes until warmed and slightly crisp at edges. Option B: Toast in skillet — after sausages are cooked, place buns cut-side down in the skillet for 1–2 minutes until marked and warm.
Spread 1 tablespoon spicy brown mustard inside each bottom bun and 1 tablespoon on the top if desired.
