Prep
Peel and cube the sweet potato into roughly 1/2-inch cubes so they cook evenly. Dice the onion and bell peppers, and mince the garlic. Measure out spices and herbs.
Heat a large (10-12 inch) oven-safe or stovetop skillet over medium heat. Add 1 tablespoon olive oil and let it warm until shimmering.
Add the sweet potato cubes in a single layer. Cook, stirring occasionally, for 6–8 minutes until the edges begin to brown and the pieces are starting to soften. If the pan looks dry, add up to 1 teaspoon more oil or a splash of water and cover for 2 minutes to help them steam and soften.
Push the sweet potatoes to one side of the skillet. Add the ground pork breakfast sausage to the cleared side. Break it up with a spatula and cook for 4–5 minutes until browned and mostly cooked through.
Stir the sausage and sweet potatoes together. Add the diced onion and diced red and green bell peppers. Cook, stirring occasionally, for 4–5 minutes until the onions are translucent and peppers have softened.
Add the minced garlic, smoked paprika, fresh thyme leaves, salt, and black pepper. Stir to combine and cook for 1–2 minutes more to bloom the spices and garlic. Taste and adjust seasoning as needed.
Eggs & Finish
Once eggs are cooked to your liking, remove skillet from heat. Sprinkle chopped fresh parsley over the top and add hot sauce if desired.
