Haus Sauce

In a small bowl, combine mayonnaise, Dijon mustard, whole-grain mustard, ketchup, apple cider vinegar, Worcestershire sauce and a dash of hot sauce if using.

Whisk until smooth and season with freshly ground black pepper to taste (about 1 tsp). Adjust balance: more vinegar for tang, more mayo for creaminess. Set aside.

Sandwich Assembly & Cooking

Prepare sauerkraut

Place sauerkraut in a fine-mesh sieve and press gently with the back of a spoon to remove excess liquid. Pat dry with paper towel. This prevents soggy bread.

Warm corned beef

If corned beef is cold, warm it briefly: place slices in a skillet over medium-low heat for 1–2 minutes, or microwave on a damp paper towel for 20–30 seconds until heated through. Keep warm.

Butter bread

Spread softened butter evenly on one side of each rye bread slice. The buttered sides will be the outside of the sandwich for grilling.

Assemble sandwich

Flip the slices so unbuttered sides face up. Spread about 1 tablespoon of the prepared Haus sauce on the inside of each slice of bread. On one slice, layer the warmed corned beef evenly (about 6 oz). Top the meat with drained sauerkraut (about 1/3 cup), then place 2 slices of pepper jack cheese on top of the sauerkraut. Close sandwich with the second slice of bread, buttered side out.

Grill sandwich

Heat a nonstick or cast-iron skillet over medium heat. Place the sandwich in the skillet and press gently with a spatula. Cook 3–4 minutes until the bottom is golden-brown and the cheese begins to melt. Flip carefully, press again, and cook another 3–4 minutes until the second side is golden and cheese is fully melted. If the bread browns before the cheese melts, reduce heat to low, cover skillet for 1–2 minutes to help cheese melt through.

Rest and slice

Transfer the grilled Reuben to a cutting board and let rest 1 minute, then slice in half on the diagonal. This brief rest stabilizes the sandwich so fillings don’t spill out.

Plating & Side

Place the sliced Reuben on a plate and serve with the choice of side (about 1 cup of kettle chips or fries). Optionally serve extra Haus sauce on the side for dipping.
