Method

Haus Sauce

Make sauce

In a small bowl, combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, Worcestershire sauce, apple cider vinegar, garlic powder, smoked paprika, and black pepper. Whisk until smooth. Taste and adjust seasoning (add a pinch of salt or more vinegar if desired). Chill in the refrigerator while you prepare the burger (minimum 10 minutes) to let flavors meld.

Prepare patties

Season both sides of the 8 oz beef patty with 1 tsp salt and 1 tsp freshly ground black pepper. Let sit at room temperature for 10 minutes while you heat your pan or grill.

Cook bacon

Heat a skillet over medium heat. Add the 2 strips of bacon and cook until crisp, about 5–7 minutes, turning once. Transfer to a paper towel-lined plate and keep warm.

Cook patty

Increase heat to medium-high. Add a small amount of oil or use the bacon fat in the pan. Place the seasoned patty in the skillet or on a preheated grill. Cook for 3–4 minutes without moving to develop a crust. Flip and cook an additional 3–4 minutes for medium (internal temp ~135–140°F / 57–60°C). For medium-well, cook 5 minutes after flipping. During the last 1 minute of cooking, place a slice of cheddar on the patty and cover the pan to melt the cheese.

Toast bun

While the patty finishes, spread 1 tbs softened butter on the cut faces of the brioche bun. Place buttered sides down in a separate skillet or on the grill over medium heat and toast until golden, about 1–2 minutes. Remove and keep warm.

Assemble burger

Spread about 1–2 tablespoons of the prepared Haus sauce on the bottom bun. Place lettuce leaf on the sauce, then the cheesy beef patty, followed by the two bacon strips (break if needed to fit), tomato slices, red onion rings, and 3 slices of Haus pickles. Spread a thin layer (about 1 tsp) of sauce on the top bun and place on top. Press gently to secure.

Vegetables & Pickles

Wash and dry the lettuce leaf, thinly slice tomato and onion, and slice pickles lengthwise if not pre-sliced. These items are added during assembly (see Assemble burger step).

Optional Sides

Prepare your chosen side: bake or fry French fries or sweet potato fries according to package or recipe instructions until golden and crisp (usually 18–25 minutes at 425°F / 220°C for hand-cut fries). For a side salad, toss mixed greens with a light vinaigrette and season to taste.
