Mix and shape

Place ground beef in a bowl. Add kosher salt, freshly ground black pepper, and Worcestershire sauce. Gently combine with your hands or a fork until just mixed — avoid overworking. Divide into 4 equal portions (about 5 oz each) and form into slightly thinner patties than the bun diameter, about 3/4 inch thick in the center (they will spread while cooking).

Chill briefly

Place shaped patties on a plate and chill in the refrigerator for 10–15 minutes to help them hold shape while cooking.

Buns & Toasting

Split buns and spread softened butter evenly on cut sides. Preheat a large skillet or griddle over medium heat. Toast buttered sides of the buns face-down on the skillet until golden brown, about 1–2 minutes. Remove and set aside, toasted side up.

Prepare toppings while patties chill: thinly slice the white onion into rings, slice the tomato into 1/4-inch rounds, wash and dry two large crisp lettuce leaves, and have dill pickle slices ready. Portion 1 slice of American cheese per patty.

Signature Sauce

Make the sauce: in a small bowl combine mayonnaise, yellow mustard, ketchup, sweet pickle relish, apple cider vinegar, smoked paprika, hot sauce (if using) and 1/8 tsp salt. Stir until smooth and taste, adjusting salt or vinegar for brightness. Cover and refrigerate until ready to assemble.

Cook patties

Heat a heavy skillet or griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and swirl to coat. Add the chilled patties leaving space between them. Cook without pressing for 3–4 minutes, until a brown crust forms on the bottom. Flip once and cook 2–3 minutes more for medium (adjust time +/- for desired doneness).

Melt cheese

About 1 minute before the patties are done, place a slice of American cheese on each patty. Cover the pan briefly (or place a lid or bowl over) to help the cheese melt, about 30–60 seconds.

Assemble burgers

Spread about 1 tablespoon of the signature sauce on the bottom bun. Place the cheesy patty on the sauce, then add 2 pickle slices, a couple of onion rings, a tomato slice, and a lettuce leaf. Spread a thin layer of sauce on the top bun and place on top. Repeat for remaining burgers.
