Chill the bottle of Dr. Thanisch Riesling Kabinett to 8–10°C (46–50°F). If stored at room temperature, place in refrigerator for 90 minutes or an ice bucket for 20–30 minutes.

Open the bottle carefully. Pour one 5–6 oz (150–180 ml) glass per guest. Serve in a white wine glass or smaller tulip-shaped Riesling glass to concentrate the wine’s aromas.

Recommend tasting temperature note to guests: Kabinett displays delicate acidity and fruity aromatics best at cooler temperature; avoid serving too cold (<6°C) which mutes flavors.

Remove cheeses from refrigerator 15–20 minutes before serving so they come to near-room temperature. Slice the goat cheese into 1/3-inch rounds and the washed-rind cheese into thin wedges.

Thinly slice the half green apple crosswise into 6–8 thin slices. Immediately squeeze a few drops of fresh lemon juice over the apple slices to prevent browning and to add a bright acid note that complements the wine.

Peel if desired and slice the quarter cucumber into 8 thin rounds.
