Preparing the Lemon Infusion

Zest the lemons

Wash 8 large organic lemons thoroughly. Using a vegetable peeler or microplane, remove only the yellow zest, avoiding the bitter white pith. Collect the zest in a clean, dry bowl.

Jar and combine with alcohol

Place the lemon zest in a clean 1‑liter (or larger) glass jar with an airtight lid. Pour 750 ml of high‑proof neutral grain alcohol (or vodka) over the zest, ensuring all zest is submerged. Seal the jar tightly.

Steep

Store the jar in a cool, dark place. Let the zest steep for 7–14 days. Shake the jar gently once per day to agitate the zest. The alcohol will gradually turn bright yellow as oils extract from the zest. Taste after day 7 and continue to day 14 if you want a stronger lemon aroma and flavour.

Making the Simple Syrup

When the infusion period is nearly complete, combine 3 cups sugar and 3 cups water in a medium saucepan. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Do not boil vigorously; bring just to a simmer, then remove from heat and let cool to room temperature. For a lighter, crisper limoncello, you may use a lighter syrup (2 cups sugar to 3 cups water) — adjust sweetness to taste.

Strain the infusion

After infusion, strain the alcohol through a fine mesh sieve lined with cheesecloth or a coffee filter into a large bowl to remove zest and fine solids. Press the zest gently to extract remaining alcohol, but avoid squeezing pithy bits that add bitterness.

Mix alcohol and syrup

Pour the cooled simple syrup into the strained lemon‑infused alcohol, mixing thoroughly. Taste the mixture. If it is too strong, add small amounts of filtered water (or cooled boiled water) to reach desired strength and balance. If not sweet enough, dissolve and add a little more sugar to taste, stirring until completely dissolved.

Adjust and bottle

Once balanced, let the combined limoncello rest for at least 24–48 hours in a sealed container to marry flavors. Then transfer to sterilized bottles using a funnel and close airtight.

Serving and Storage

Chill bottles in the freezer before serving. Serve well‑chilled in small chilled shot glasses. Store limoncello in the freezer or refrigerator for up to 6–12 months for best flavor. Shake gently before serving if any cloudiness appears.
