Make or measure juices
If using fresh fruit, juice lemons and pineapple until you have approximately 3/4 cup each. Measure out 1/2 cup passionfruit puree (store-bought or strained fresh pulp).
In a large pitcher (1.5–2 quart capacity), combine the fresh lemon juice, fresh pineapple juice and passionfruit puree.
Add the simple syrup to the pitcher. Stir vigorously for 20–30 seconds to fully incorporate the thicker passionfruit puree into the juices. Taste and adjust sweetness: add up to an additional 1–2 tablespoons simple syrup if you prefer sweeter.
Carbonation & Finish
Fill the pitcher about halfway with ice (or place ice directly into each serving glass). This chills the base without immediately diluting it too much.
Slowly pour the chilled club soda into the pitcher over the back of a spoon or down the side to preserve as much carbonation as possible. Gently fold the soda into the fruit base with a large spoon — do not stir vigorously to avoid flattening the bubbles.
Taste and adjust: if the drink tastes too tart, add a tablespoon or two of simple syrup; if too sweet, add a splash more lemon or pineapple juice.
