1

Build and Shake

Fill a cocktail shaker halfway with ice. Add 2 oz vodka, 1 oz fresh pineapple juice, 0.5 oz fresh lime juice and 0.25 oz simple syrup (omit if you prefer drier). Secure the lid and shake vigorously for 10–12 seconds until the shaker is well chilled.

2

Prepare Glass

Fill a highball or Collins glass with fresh ice (about 1 cup). If you like, briefly wet the rim with a lime wedge and dip in very fine sugar for a light frosted rim (optional).

3

Strain and Top

Strain the shaken mixture into the prepared glass over the ice. Top gently with 4 oz pineapple seltzer (or pineapple-flavored sparkling water). Stir once lightly with a bar spoon to combine — do not over-stir to preserve carbonation.

4

Garnish

Garnish with a pineapple wedge and a lime wheel on the rim. Optionally tuck a mint sprig beside the pineapple for aroma.

5

Serve immediately while the seltzer is fizzy. Adjust sweetness next time by increasing or decreasing the simple syrup by 0.25 oz.
