Prepare glass and garnish
Chill a rocks or short stemmed wine glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail. Meanwhile, take one fresh rosemary sprig and gently clap it between your palms once or twice to wake the aromatics. Using a vegetable peeler or sharp knife, cut a 2–3 inch strip of orange peel, avoiding too much pith.
Build the drink
Discard the ice water from the chilled glass (if used) and add the large ice cubes or sphere to the glass so it fills the glass about two-thirds. Pour 3 oz Lyre's Non-Alcoholic Aperitif Rosso over the ice. If you prefer a slightly sweeter drink, add 1/4 teaspoon simple syrup now.
Top and lightly stir
Gently top the drink with 2 oz chilled sparkling water. Give the cocktail one gentle stir (about 4–6 slow revolutions) with a bar spoon to combine without flattening the bubbles.
Aromatize and garnish
Express the orange twist over the drink by holding it skin-side down about an inch above the glass and giving it a firm twist to release oils onto the surface. Rim the glass with the peel if you like extra citrus aroma, then drop the twist into the drink. Finish by placing the rosemary sprig into the glass, standing it upright or resting it against the ice so its aroma rises as you sip.
