Pour 1 cup of Disaronno Amaretto into a clean 16–24 oz glass jar with a tight-fitting lid. This will be the base of your cordial infusion.

Make a simple syrup

Combine 1/4 cup water and 1/4 cup granulated sugar in a small saucepan. Heat over low-medium heat, stirring until the sugar fully dissolves and the mixture is clear. Do not boil. Remove from heat and let cool to lukewarm. If using corn syrup for extra body, stir in 1 tablespoon while the syrup is still warm.

Once cooled to near room temperature, pour the simple syrup into the jar with the Disaronno and close the lid.

Add your aromatics to the jar: split and scrape the seeds from 1/2 vanilla bean and add both seeds and pod (or add 1/2 piece to represent half a bean). Add 2 strips of orange peel (remove as much white pith as possible). Add 4 toasted whole almonds (lightly smash them in a towel to release oils) OR if you prefer stronger almond aroma without solids, use 1–2 teaspoons of 100% almond extract instead (add later, see note). If using, add a half cinnamon stick.

Seal the jar tightly and give it a gentle shake to distribute ingredients.

Place the jar in a cool, dark place and allow to infuse for 3–7 days. Taste once per day after day 2: swirl, open, and sample 1/4 teaspoon diluted with a little water or on ice to evaluate flavor. The goal is to deepen vanilla, orange and toasted almond complexity without introducing bitterness from the peel or over-extraction from the cinnamon.

If you used almond extract instead of whole almonds, add 1–2 teaspoons of the extract after 24 hours, then taste and adjust—extract can quickly overpower so add sparingly.

When the infusion reaches your preferred balance (typically 3–7 days), strain the liqueur through a fine-mesh sieve lined with cheesecloth or a coffee filter into a clean container to remove solids. Press gently on solids to recover liquid but avoid forcing pith.

Taste the strained cordial. If it’s too sweet or too strong, adjust with a small amount of filtered water (start with 1 tablespoon at a time) to reach desired proof and flavor balance.

Bottle the finished Disaronno Amaretto cordial in a clean bottle or jar, seal, and label with date. The cordial will keep for several months stored in a cool, dark place; refrigerate after opening for best freshness.
